Apple Pie Bars

My grandma called me the other day and it seriously had me reminiscing on the family get togethers we would have while I was growing up. Grandma’s apple pie was always all the rage - seriously, everyone would argue over who got it!

Sooo I decided to make something apple-pie inspired! Welcome Apple Pie Bars ..

Ingredients

Base Layer

  • 3/4 cup of almond butter

  • 1/4 cup coconut flour

  • 3 tbsp coconut oil

  • 1/4 cup + 1 tbsp of pure maple syrup

  • 1/2 tsp baking soda

  • dash of himilayan salt

  • 1 tsp of cinnamon

  • 1 cup almond flour

Top Layer

  • 3 apples gala apples (skinned and chopped)

  • 3 tbsp of coconut sugar

  • 1/3 cup of water

  • 2 tbsp of arrowroot powder

  • 1 tbsp of lemon juice

  • dash of Himalayan salt

  • 2 tsp of cinnamon

  • 1 tsp of nutmeg

How To:

Base Layer

  1. Preheat oven to 350 degrees and line an 8x8 pan or two bread pans with parchment paper.

  2. Mix together all ingredients until a crumbly texture is reached.

  3. Put a small portion of the crumble (approximately 1/3 cup) aside, then spread the crumble into the pan and pack it down.

  4. Place this layer into the oven on its own for 6 minutes while you make the top layer.

Top Layer

  1. Add the water, apples and lemon juice to a sauce pan and heat until apples are softened.

  2. Once the apples are partially softened add in all the other ingredients and stir until a sticky consistency is reached!

  3. Pour over top of the bottom layer evenly and place back into the oven for 25 minutes.

Once you take this out of the oven, let cool completely before removing from the pan and cutting into bars! This seriously pairs so well with vanilla ice cream (or nice cream)!
